Jalapeno Poppers

Snacking has reached a new level.

INGREDIENTS

  1. 1 packet Ideal Protein Veggie Meatless Mix
  2. 1 green onion, finely chopped
  3. 1 tablespoon chopped cilantro, plus more for garnish
  4. 3 large jalapeños or 3 mini bell peppers, cut in half lengthwise and seeds scraped out
  5. 2 tablespoons (about 1⁄2 ounce) grated pepper, Jack, or other hard cheese


Instructions:

Preheat the oven to 425 degrees F. Line a small baking sheet with parchment paper. Cook the meatless mix according to packet directions.

Crumble and place in a small bowl. Stir in the green onion and cilantro.

Place the pepper halves on the prepared baking sheet, cut side up. Spoon the filling into the peppers, pressing down gently and mounding it slightly. Sprinkle the cheese over the tops.


Bake until the peppers are tender and the filling is nicely browned, 10 to 12 minutes. Serve sprinkled with more cilantro.

Jalapeno Poppersrust-less Spinach Quiche

This flavourful crustless spinach quiche is so satisfying you'll want it for every meal.


Ingredients:

  1. 2 oz. green onion, chopped
  2. 2 Medium Mushrooms, sliced
  3. 10-oz package of chopped frozen spinach, thawed and drained well
  4. 1/4 cup red pepper chopped
  5. 2/3 cup diced fat-free ham (optional)
  6. 5 Eggs
  7. 1/8 Tsp Pepper
  8. 1/2 Tsp Sea Salt


Instructions:

Sauté the mushrooms until tender. Add the spinach and ham; stir and cook until heated and mixed well.

Grease the pie plate with spray and pour the spinach mixture into the plate. Add onions, salt, and pepper. Beat the eggs and pour evenly over the spinach mixture.


Bake at 350 degrees for 25-35 mins.


OPTIONAL:

Make a base out of thinly sliced zucchini and change vegetables based on preferences.
